Remember those summers as a kid when you longed for the ice cream truck to come cruising down your street with colorful icees ripe for the picking (red is a flavor – don’t argue with us, lol)? Well, those days don’t have to be just memories anymore.
Adulthood doesn’t have to mean leaving your favorite childhood pastimes behind you. You still can enjoy your favorite popsicle treats with an update, aka an adults-only twist, aka spiked with alcohol! Yup, boozy popsicles are where it’s at, and just what hard-working adults need to cool off in the summer heat.
We’ve rounded up a few recipes for icy treats you need to try that will keep you and your crew classy, cool and lit all weekend long.

Strawberry Mojito Pops
INGREDIENTS:
1/2 cup rum
3/4 cups chopped strawberries
2 cups limeade
4 oz. fresh lime juice
8 mint leaves, chopped
6 wooden popsicle sticks
DIRECTIONS:
Mix all ingredients together then evenly divide mixture into popsicle molds. Chill popsicle molds in freezer for about 20 to 30 minutes or until liquid is slightly frozen. Add wooden popsicle sticks and freeze overnight. Run warm water over molds to loosen popsicles and serve.

Tequila-Spiked Mango Popsicles
INGREDIENTS:
3 cups chopped mango (very ripe)
3 oz lime juice
3 oz agave
3 oz water
1 pinch salt
3 1/2 oz tequila
Chile powder (for garnish, optional)
INSTRUCTIONS:
Chop the mango. Cut large slices on either side of the pit and cube the fruit so that it releases easily from the peel. Add the mango to the blender. Add the lime juice, agave, water, salt, and tequila to the blender. Puree the mixture until smooth and pour into the popsicle molds. Place the tray in the freezer. After approximately one hour, add the popsicle sticks. Freeze until solid. Once frozen, release the popsicles by running them under warm water for a few seconds. Dip the popsicles in chile powder to garnish (optional).

Moscow Mule Pops
INGREDIENTS:
2 cups ginger beer
1 cups limeade
1/2 cups vodka
2 limes, zested and juiced
Popsicle sticks
Zest of 2 limes, for serving
2 tbsp. sanding sugar, for serving
DIRECTIONS:
In a large bowl or glass measuring cup, combine ginger beer, limeade, rum, lime juice and lime zest. Whisk until smooth and fully combined. Divide mixture among popsicle molds and insert a popsicle stick into the center of each. Freeze until solid, at least 5 hours and up to overnight. Mix zest of 2 limes with sanding sugar. When ready to serve, sprinkle pops with sugar mixture.
