We asked for summer, and it came in with a vengeance. The country is in the middle of a heatwave and in desperate need of some cool relief.
While the kiddies (and a few big kids) have popsicles to cool off with, us hard-working adults need something a little bit stronger. To beat this summer heat, we need to get creative and put our favorite cocktails on freeze.
From wine and sangria to vodka and tequila, these tasty and chic cocktails are exactly what you and your crew need to sit back and stay chill all weekend long. Well, that and a strong air conditioner of course!

Lava Flow Cocktail
INGREDIENTS:
4 oz coconut rum
4 oz light (white) rum
10 oz frozen strawberries
8 oz pineapple juice
8 oz cream of coconut
2 cups crushed ice
fresh pineapple wedges, for garnish
DIRECTIONS:
In a blender, combine coconut rum, light rum, and strawberries. Blend to a puree. Transfer to a clean pitcher.
Clean and wash out blender. Add pineapple juice, cream of coconut, and crushed ice. Blend until smooth.
Divide strawberry rum puree among 4 serving classes. Slowly pour pineapple coconut mixture into the glass. The red mixture will evenly swirl with the white mixture.
Garnish with a pineapple wedge and serve immediately.

Sangria Swirled Frozen Margaritas
INGREDIENTS:
For the sangria swirl:
1 cup red wine, frozen in ice cube tray
2 tablespoons triple sec (orange liquor)
1 tablespoon fresh lime juice
juice of half an orange
For the regular frozen margarita:
6 ounces frozen limeade concentrate
2 shots tequila
1 shot triple sec
1 cup ice
DIRECTIONS:
First, dip two margarita glasses in water or lime juice, and rim the edges with salt or sugar (your choice).
Next, puree the frozen red wine cubes with the triple sec, lime juice, and orange juice. Pour into a small glass and have ready on the side.
Add the limeade concentrate (not defrosted), tequila, triple sec and ice to a blender. Puree until slushy.
Divide the margarita mixture between two glasses, and swirl in the sangria mixture.

Prosecco Slushies
INGREDIENTS:
2 c. Prosecco
1 1/2 c. chopped strawberries
1/4 c. lime juice
1/2 c. vodka
ice
Mint, for garnish
DIRECTIONS:
In a blender, combine prosecco, strawberries, lime juice, and vodka. Fill the blender about halfway full with ice, then blend until the mixture is slushy.
Divide slushies between glasses and garnish with mint.
