Ingredients:
1 pkg. Hillshire Farm Smoked Sausage
1/2 cup chopped green bell pepper
1/3 cup chopped celery
1/4 cup chopped onion
1 can (10 ounces) diced tomatoes with green chilies
3/4 cup water
1 pkg. (5.6 ounces) Spanish rice mix
1/4 cup sliced pimiento-stuffed green olives
1/4 teaspoon ground black pepper
Directions:
Cut sausage in half lengthwise, then cut into 1/2″ slices. Heat a 5-6 quart pan over medium-high for 3 minutes. Add sausage, peppers, celery and onion; cook, stirring frequently 4-5 minutes or until vegetables are tender and sausage is lightly browned.
Add all remaining ingredients and bring to a boil, stirring frequently. Reduce heat to medium-low, cover and cook 10-12 minutes or until liquid is absorbed. Remove from heat and let stand 5 minutes before serving.
