How To Make a White Bean and Collard Green Soup

WHITE BEAN AND COLLARD GREEN SOUP RECIPE
Makes 6 servings.
1 pound dried small
white beans
4 to 5 cups water
2 chorizo sausages
1⁄4pound turkey bacon,
cut into bite-size
pieces
1large onion, chopped
1large green pepper,
seeded and chopped
3large garlic cloves,
smashed or minced
Salt (optional)
1⁄4teaspoon black pepper
1teaspoon dried thyme
(optional)
1 teaspoon dried
oregano (optional)
1small bunch collard
greens
Rinse beans in cold water; remove any stones or foreign matter. In 5-quart Dutch oven or large bowl, cover beans with water; soak overnight. Drain; transfer to or let remain in Dutch oven. Add 4 to 5 cups water. Bring to boil over medium heat; add sausage, bacon, onion, green pepper, garlic, salt (if desired), pepper and herbs (if desired). Cover; reduce heat. Slowly simmer about 11⁄2 hours, or until beans are soft. Meanwhile, thoroughly rinse greens, remove thick stems and chop coarsely. When beans are ready, mash some of them against side of pot with wooden spoon. Add greens; simmer 30 additional minutes. Adjust seasonings and serve.
Per serving: 405 calories.
Once this soup is ready, all that’s needed is warm corn bread and a hearty appetite.
